"First, our California giant mission olives are pitted and salt-cured for 10 months to a year to produce a rich tasting olive with creamy texture and no chemical after taste.
We hand stuff each olive with a wedge of a tiny pickled whole lemon (seeds removed).
We place each stuffed olive in our trademark brine based on hand-crafted California champagne vineger, basil, and just the right amount of kosher salt. Our brine pulls the salt from the olive creating a perfect balance of refreshing single-varietal vinegar and salty briny olive.
We love how these olives burst with flavor, are creamy and al-dente to the tooth on first bite but finish with the surprising burst of citrus in the center.
